Most barbeque sauce is pretty pedestrian to me, I guess I lump it in with ketchup as one of those sickly sweet food products people dream up to find something to do with all that high fructose corn syrup out there. Ok, rant aside, as much as I detest the megamart BBQ sauce, a home made sauce is a thing of rare beauty. What follows is the ingredient list for a sauce that made my wife remark, "those are the best ribs I've ever had". While this sauce is killer, and the ribs were delicious, I can't help wonder what a little pecan wood smoke would have done here ...
- 1 1/2 cups dark brown sugar
- 8-12 oz organic 100% soy sauce (wheat free)
- 2-3 Tbsp guajillo chile powder
- 1-2 Tbsp ancho chile powder
- 4 cloves garlic, minced
- 3 medium red onions, fine dice, slightly caramelized
- 6 oz tomato sauce
- 4 oz tomato paste
- 1-2 tsp rosemary
- 1/2-1 tsp thyme
- 1 tsp Greek oregano
- 1 tsp red pepper flake
- 1-1 1/2 Tbsp annato oil
- 2 tsp blackstrap molasses
- 1 tsp hot smoked paprika
- kosher salt TT
